If you enter Germany from outside the EU carrying cash of €10,000 or more - in any mix of currencies, converted at the day's rate - you must declare it in writing, unsolicited, to German customs. This is anti-money-laundering law, and the penalty for not declaring is a substantial fine, with part of the undeclared sum potentially seized on the spot. Two practical notes: the limit applies per person, and "cash" includes equivalent instruments, not just notes. Realistically, most nurses carry a few hundred euros and do a bank transfer for the rest - which is safer, cheaper and cleaner anyway.
Meat and dairy products from non-EU countries - and that includes India - are banned or heavily restricted for animal-health reasons. This is the rule that catches loving families out: the home-made ghee, the khoya sweets, the paneer, the pickle with meat in it. Customs dogs are trained specifically for animal products, and "my mother made it" is not a defence. Vegetarian dry snacks, packaged spices, dals, pickles without meat or dairy - generally fine in personal quantities. When in doubt, leave it out; everything is available in Indian stores in Germany anyway.
Your personal used belongings - clothes, your laptop, your phone - are not taxed. On top, an air traveller can bring new goods and gifts worth up to €430 duty-free (and up to 200 cigarettes; alcohol has separate small limits). Above that, you pass through the red channel and pay duty. On gold: your personal jewellery - the chain you wear, your wedding bangles - is treated as personal effects, and jewellery is not counted as "cash" for the €10,000 rule. But quantities beyond personal use look commercial and invite questions, so wear your jewellery rather than carrying a pouch of it, and keep purchase receipts for expensive items.

One mindset tip: the red channel is not a punishment - declaring is free, and officers are far friendlier to someone who asks than to someone they catch. The trouble only ever comes from not declaring.
Keep it boring: modest cash well under the limit (transfer the rest), vegetarian packaged food only, medicines with prescriptions, jewellery worn rather than bundled, receipts for new electronics, and your document folder in hand luggage. Boring is exactly what you want at a border.
